Fungal Lactase

Fungal lipase is an enzyme that catalyzes the hydrolysis of fats (lipids) into glycerol and free fatty acids. It is produced by fungi, mainly from genera such as Aspergillus, Rhizopus, Candida, and Mucor.

Lipases from fungal sources are especially valuable in industrial and biotechnological applications due to their stability, ease of extraction, and the ability to work in non-aqueous media.
